Break the egg into a bowl and lightly beat it. Brush the pie with the beaten egg to glaze, then bake it in the oven for 20 minutes. Make a crown from the pastry offcuts, glaze, and bake for 10 minutes.

Make the salad: Mix together the rice vinegar, a little purple food coloring, and the olive oil in a mixing bowl, then season with salt and pepper. Toss the lettuce with the vinaigrette (or place in plastic eye droppers).

Cut the pie into 4 pieces and serve with the salad.
